When we first settled in Wisconsin after fleeing Kosova, we missed many aspects of our home country. One of the things we missed the most? The sausage. 

Early on in our Madison days, one of our sons said he was taking a trip to Chicago to find Albanian-style sausage. Our family would eat it daily, and we wanted a little reminder of our old lives.

We told him there was no need to make the trip. We had my father’s recipe, after all — we’d make sausage for ourselves. That’s how our story begins.

One family sausage recipe, two worlds apart

Our story has two beginnings. The first starts over 50 years ago in Prishtina, the capital of Kosova. Musa’s father — a local shepherd and farmer — quickly became known in the region as “the butcher.” He quickly became known for his authentic, Old World sausage — especially with the Albanians living across the country.

The second begins after we fled Kosova in 1999. We arrived in Madison, WI with the clothes on our backs, the refugee papers in our pockets, and our family’s sausage recipe safely tucked away. The first stateside batch of our sausage was crafted in our family’s garage, using a tiny smoker. Our friends and neighbors started placing orders — and over 20 years later, the sausage is well known (and loved) all over the United States.
